Dairy Free Creamy Cilantro Dressing

 

 

INGREDIENTS

  • 1 CUP CASHEWS, SOAKED IN WATER 1-6 HOURS, AND THEN RINSED. IF YOU HAVE A HIGH POWERED BLENDER THEN YOU CAN SKIP THIS STEP IF YOU LIKE
  • THE JUICE OF 2 LIMES
  • 1/2 CUP OLIVE OIL
  • 1/2 CUP WATER
  • 1/4 CUP APPLE CIDER VINEGAR
  • 2-4 GARLIC CLOVES, DEPENDING HOW GARLICKY YOU WANT IT
  • PINCH OF SALT
  • 2 CUPS CILANTRO, PACKED
  • ALMOND MILK (TO ATTAIN DESIRED CONSISTENCY)

INSTRUCTIONS

  1. PLACE ALL INGREDIENTS EXCEPT CILANTRO IN A BLENDER, AND BLEND UNTIL SMOOTH.
  2. ADD CILANTRO AND BLEND
  3. ADD ALMOND MILK UNTIL DESIRED CONSISTENCY IS ACHIEVED.
  4. REFRIGERATE UNTIL CHILLED.
