INGREDIENTS
- 1 CUP CASHEWS, SOAKED IN WATER 1-6 HOURS, AND THEN RINSED. IF YOU HAVE A HIGH POWERED BLENDER THEN YOU CAN SKIP THIS STEP IF YOU LIKE
- THE JUICE OF 2 LIMES
- 1/2 CUP OLIVE OIL
- 1/2 CUP WATER
- 1/4 CUP APPLE CIDER VINEGAR
- 2-4 GARLIC CLOVES, DEPENDING HOW GARLICKY YOU WANT IT
- PINCH OF SALT
- 2 CUPS CILANTRO, PACKED
- ALMOND MILK (TO ATTAIN DESIRED CONSISTENCY)
INSTRUCTIONS
- PLACE ALL INGREDIENTS EXCEPT CILANTRO IN A BLENDER, AND BLEND UNTIL SMOOTH.
- ADD CILANTRO AND BLEND
- ADD ALMOND MILK UNTIL DESIRED CONSISTENCY IS ACHIEVED.
- REFRIGERATE UNTIL CHILLED.
Ingredients
- 8 cups broccoli (two large to medium sized crowns), chopped into bite-size pieces
- 1 cup raw sunflower seeds
- ½ cup red onion, finely chopped
- 3/4 cup raisins
Cashew Dressing
- 2 cup raw cashews, soaked at least 1- 2 hours
- 2/3 cup water
- 3 Tablespoons apple cider vinegar
- 2 Tablespoon lemon juice
- 2 Tablespoon maple syrup (or honey)
- 2 Tablespoon shallot, chopped (optional)
- 2 clove garlic, chopped
- 1 teaspoon sea salt
- 1 teaspoon dijon mustard
Instructions
- Make dressing by combining all ingredients in a high powered blender or processor until completely smooth.
- Mix together broccoli, raisins, red onion, raisins, and sunflower seeds.
- Top with dressing and combine until all ingredients are covered.
